Features
Dingo is the second bricks-and-mortar establishment by the crew behind the smash-hit Dingo Ate My Taco food truck and laneway haunt Taqueria Sin Nombre. Here, the team returns to its Tex-Mex roots, serving plates inspired by both the food truck and travels to the Lone Star State.
At Dingo, that influence is clearly on display in the breakfast tacos, an occasional food truck special the team puts front and centre. Signatures include brisket, egg and cheese on house-pressed flour tortillas, while a bean, spinach and bacon number comes on blue corn tortillas, also pressed in-house. The move into a permanent kitchen unlocks dishes the team simply can’t make within the constraints of the truck.
The drinks list focuses heavily on mezcal, alongside Micheladas and 40s, the slang term for 40-ounce (1.18-litre) beers commonly drunk in the United States.
