Byrdi’s drinks list has always been high concept, with a small number of drinks designed around native flora and ingredients. The CBD cocktail bar was founded in 2022 by Luke Whearty and Aki Nishikura, the couple behind celebrated Singapore bar Operation Dagger. Cocktails are built with care and precision at Byrdi, though the concept at the venue’s core is prone to change.

Byrdi’s current iteration, which the team has dubbed Ephemera, is a fleeting offering with a relaxed service style, a larger focus on wine and a change in the bar’s cocktail list. There’ll always be a Martini, for example, though what that Martini is will change with the availability of seasonal, native ingredients.

The wine list, formerly two whites, two reds and two sparkling options, has expanded to include 20 Australian wines, all available by the glass or bottle. And the food offering is now solely focused on snacks such as prawn toast with pepperberry mayo, and Shark Bay scallops with chicken fat and soy sauce.
