The Bar Bridge brief is simple: descend the stairs to a moody basement for one of the best Martinis in Sydney. It’s not remarkably different from the brief at Mucho group’s Bar Planet in Newtown or Bar Herbs around the corner. Here though, the Martinis are dryer, the service is slicker, and the free popcorn is tossed with nori and coats your fingers in an addictive green dust.
The hero Bridge Martini has a base split between Hickson House’s “straight up and down” London Dry Gin and Bridge’s own vodka spiked with plum and sumac notes. It’s the one to order on your first visit, followed by the Citron Martini – or the rotating monthly special – for a fun variation on the classic.
